PASTA WITH BASIL AND GUACAMOLE PESTO
– 500 g pasta
– 1 big bunch fresh basil leaves
– 1 pack Fanan’s Guacamole
– 35 g pine nuts
– 60 ml olive oil
– 1-2 tablespoon of lemon juice
– Salt and pepper to taste
– 2-3 garlic cloves
Boil the pasta according to instructions on the pack.
While the pasta is cooking, process the basil, Fanan’s Guacamole, garlic, pine nuts, lemon juice, olive oil, salt and pepper in a food processor until thoroughly combined.
Once the pasta is ready, drain the pasta and mix the warm pasta together with the pesto. Serve immediately.
